Best. Chicken. Dinner. Ever.

For a morning snack I packed a yogurt parfait, which was so tasty I forgot to take a picture of it before it was almost gone!

Lunch was leftovers.

Afternoon snack = vending machine run.

Met a good friend from college (which we realized was ten years ago!) for coffee. Location look familiar? It's my new favorite coffee shop.

Iced decaf latte.

On my way back to the car I walked right past our old dorm. Or at least where our old dorm was. This is a picture of the resting grounds for Ogg East and West. Go Bullis House!

Then I picked up my dinner made deliciously by Red. And it was fantastic!

Cucumber tomato salad with the best tomatoes I've had all year.

Roasted half chicken with carrots, onion, fennel and couscous. I don't know what she did to this chicken, but it was to die for! The best chicken I've ever had in my life!

Have you ever had chicken melt in your mouth? It was like that...but better.

It was tender and buttery and flavorful and tender...did I say that already? The vegetables were perfect and I really liked the fennel, which I was really curious about.

How do you follow this up? Well, I had to have dessert, otherwise I would have eaten Mr. Z's portion (he was working tonight). So I had the last two snickerdoodles from the co-op.

And indulged in a late night snack while watching my newest Hulu fav, Rescue Me with Dennis Leary. He's pretty funny.

Sadly, this was not the end of it. I snacked a lot more throughout the night and I hate nights like these! It's usually when Mr. Z is gone and I am left to my own devices. Apparently, my own devices are carbs and sugar and more carbs. I'm not sure why it's so hard to restrain myself sometimes. It's not like I hadn't nourished by body with a delicious, nutritious dinner. I currently have a book on hold from the library called "The End of Overeating" and I'm really excited to read it, maybe I'll learn something! Oh well, tomorrow is another day.

  1. I've posted the recipe on www.sharecipe.com. It's THE easiest way I know to prepare a whole chicken.
